Does anyone have a systematic way of approaching what markets to look for? I would assume  that the term "dating" would be too competitive but maybe "fly fishing poles" would be too small?

As the billionaire Warren Buffet wrote, enter markets that you have knowledge in and are interested in.  

So ask yourself, what are you personally interested in and have knowledge in? Then do your keyword and keyword phrase research.  Also check the affiliate networks you belong to for products and services that compliment your business.

You will have a much better chance at success this way.
