Hi,
A really handy feature would be to be able to specify the number of columns that the items are displayed in as most templates are only 1 column wide.
Would anyone be able to give some advice on what code you would need to add another "item column" to a template please?

Unfortunately that is not really possible. To add another column it would not need just some code, but almost totally recode of a template. It can not be done without some good design skills.
